It&#8217;s quick, too.<\/p><\/div>\n<h4>1 Small Cabbage, shredded<\/h4>\n<h4>1 Carrot, shredded<\/h4>\n<h4>6 Scallions, split lengthwise, cut in 2 inch pieces<\/h4>\n<h4>1 c White Mushrooms, sliced<\/h4>\n<h4>1 TBSP Peanut Oil<\/h4>\n<h4>1\u20444 c Vegetable Stock or Water<\/h4>\n<h4>1 &#8211; 2 cloves Garlic, chopped<\/h4>\n<h4>1 tsp Ginger, minced<\/h4>\n<h4>2 &#8211; 4 TBSP Soy Sauce<\/h4>\n<h4>1\u20442 c Hoisin Sauce<\/h4>\n<h4>12 Moo Shu Pancakes (see <a title=\"recipe\" href=\"http:\/\/cookbook.evancaldwell.com\/?page_id=104\">recipe<\/a>)<\/h4>\n<p>&nbsp;<\/p>\n<h5>Heat wok or frying pan until nearly smoking. Add 1 tsp oil to the pan. Stir fry the mushrooms until<\/h5>\n<h5>softened. Remove mushrooms from pan. Add remaining oil to the pan and stir fry the garlic and ginger<\/h5>\n<h5>for 30 sec. Add the carrots, cabbage, and 2 TBSP soy sauce and stir fry until cabbage is crisp-tender. Add<\/h5>\n<h5>mushrooms and scallions. If the vegetables stick, drizzle with the vegetable broth or water. Once the<\/h5>\n<h5>cabbage is still slightly crisp, remove from heat. Serve with a dab of hoisin sauce on a pancake and<\/h5>\n<h5>top with a couple of TBSP of vegetables.
